Recipe: Cucumber Bites with Herbed Cream Cheese & Tomato
Ingredients:
- 2 English cucumbers, sliced into 1/2 inch chunks
- 1 pint cherry or grape tomatoes (you can cut them in half if preferred)
- Herb spread (store-bought or make your own with the ingredients below)
For the herb spread:
- 16 ounces of softened cream cheese
- 1/2 cup of freshly grated Parmesan
- 1/4 cup of sour cream
- 1/4 cup of minced parsley
- 2 cloves of minced garlic
- 1 teaspoon of onion powder
- 1/2 teaspoon of paprika
- 2 teaspoons of dill
- 1/2 teaspoon of salt
Instructions:
- If you’re using the homemade version, combine all the herb spread ingredients until smooth.
- Gently hollow out the cucumber using a melon baller.
