Dessert: Apple Enchilada

Apple enchiladas are folded apples in flour tortillas. They are delicious, simple, and quick to prepare. If preferred, replace the apples with peaches or cherries.

1 (21-ounce) can of apple pie filling

6 flour tortillas (8 inch)

1 teaspoon cinnamon powder, or more to taste

12 cups granulated sugar

12 cup brown sugar, packed

12 cups of water

13 cups melted margarine

Direction

Heat the cooking temperature to 350 degrees F (175 degrees C).

Spread the fruit evenly across all tortillas and top with cinnamon—place tortillas, seam side down, on a lightly greased 8×8-inch baking pan.

In a medium saucepan, bring the white sugar, brown sugar, water, & margarine to a boil. Reduce the heat to low and whisk often for 3 minutes.

Pour sauce equally over tortillas and top with additional cinnamon to taste.

Bake for 20 minutes in a preheated oven.


This recipe yields 6 large tortillas, which can be sliced in half to serve 12 people.
